Chocolate Coke Poke Cake

Coca-Cola in a cake, it’s weird, I know. Why would I even go there?  Simple,  a 3/4 full can of coke sitting on the counter inspired (haunted) me.  Basically, I am so cheap (some call it frugal) that I can’t even throw away a partial used can of soda. Instead, I turn that soda into a cake.  Sugar + more sugar + butter = winning!

I surprised even myself by making this cake.  I can’t get over the idea of soda IN cake.  Just weird.  Even more than my surprise of making this cake, is my surprise of totally, unabashedly, loving it too!

Before I dove into making this cake, I did a quick google search on ‘coke cakes.’  I needed to know if others did it, and what their outcome was. I saw a bunch of cakes shaped like a bottle of cola, but I also came across some recipes for a Cracker Barrel copycat coke cake.  It used exactly the ingredients I had, so I went with it (but changed a few things to make it ‘my own’).  I have never had the Cracker Barrel cake, so I can’t compare this cake to it.  My only reviews can be about THIS cake.

This one right here in these pictures, it’s EPIC!  Super super moist and rich and fudgy.  Did the coke give it the extra little kick that I haven’t had in other chocolate cakes I’ve made?  Maybe.  But really, I think it the copies amounts of fudge frosting I drenched it in.  Followed by extra chocolate chips on top.  Because I can.

The recipe can easily be doubled and just baked in a 9×13 inch pan. Double the frosting too.  Trust me, you want TONS of frosting.

The cake can be enjoyed warm, room temperature or nice and cold straight from the fridge.  No matter how you eat it, you will enjoy it.  It’s just good.

Don’t use diet coke.  Oh for the love.  Just don’t.  I know it’s bossy, but seriously, don’t.

Instead of chocolate chips on top (or in addition too) you can add chopped nuts, mini marshmallows, or any other sort of fun topping you feel like.

Make sure you poke your cake BEFORE you pour the frosting.  The frosting oozes into those holes and melts right into the cake to make it extra delicious.


Cake:
1 cup flour
1 cup sugar
1/4 tsp salt
1/2 tsp baking powder
1/2 cup butter (1 stick)
1/4 cup unsweetened cocoa powder
3/4 cup coca-cola
1 egg
1tsp vanilla
Frosting:
1/2 cup butter
1/4 cup unsweetened cocoa powder
1/2 cup coca cola
4 cups powdered sugar
1/2 cup mini chocolate chips for the topping
